Theme Recipe: Killer Wild Green Salad


I have always maintained that the best way to deal with killer plants is to eat them!!  Seriously, with food prices the way they are and weather conditions playing havoc around the country (and globe), why not eat wild green salads?  I was taught a lot about foraging by my father and have been picking edible weeds out the yard since I was a kid.  They are not really all that hard to recognize.  Everyone knows what dandelion looks like, actually most weeds are edible!


Well this sort of starts off like that joke recipe for "Elephant Stew"....you know, "first catch your elephant..."  First gather you weeds.  If you don't feel comfortable or don't want to take the time, then by a bag of "Spring Greens" at you local, add to that some purchased parsley and any other fresh herbs to like.

What's important here is the dressing!

1/4 cup good cider vinegar
2 tbsp. favorite honey or maple syrup
1/2 tsp. salt
As much fresh black pepper as you like
Then beat in 1/2 cup favorite salad oil to make an emulsion.

Pour over greens and toss.  Add anything else you like, such as those pesky tomatoes!

That'll teach those damn killer plants!
