Black And White Food


Perseistnat internet troubles kept me from posting a theme recipe for yesterday's Black and White viewing theme.  So here's one of the most famous "black and white" foods out there.  



NEW YORK BLACK AND WHITES

Basic Cookie:

Dry:

1 1/4 cup plain flour
1/2 tsp. baking soda
Pinch salt

Wet:

1/3 cup buttermilk
1/2 tsp (or more) real vanilla

The Rest:

1/3 cup butter, soft
1/2 cup sugar
1 egg
1 cookie sheet

1. Mix the dry ingredients together.

2.  In a separate bowl mix the buttermilk and vanilla well.  Preheat oven to 350 degrees.

3. In a third bowl, cream the butter and sugar together, then add the egg and beat well.  This is easily done with a hand mixer and is highly recommended!

4.  Alternate adding in the dry and wet ingredients until they are all used up.  These cookies as they are traditionally made in New York are really big!!  But for the home cook, smaller probably works better!  To make the the traditional size a 2tbsp. measure up to 1/4 cup a couple of inches apart will do--they spread when heated.  If going smaller, you want them to at least be big enough to ice, so drop good tbsp sized bits on the baking sheet.  Bake for 10 to 20 minutes (checking often!) depending of size of individual cookies--remember they should be blond, not brown.  Cool on baking rack, they need to be fully cooled to ice.

Icing:

1 1/2 cup powdered sugar
1-2 tsp. fresh lemon juice
1/4 tsp real vanilla
1 tbsp. light corn syrup
1 to 2 tsp. water (start with one)
1/4 dark powdered cocoa

While cookies are cooking and cooling, make the icings.  

1.  Mix the powdered sugar with lemon juice and vanilla lightly, quickly add the corn syrup, then 1 tsp. water.  

2.  Transfer 1/2 of the icing into another bowl and add the cocoa powder, thin with more water as needed.  You don't this too thin or too thick.

  Note:  To ice them put white icing on one side and then carefully add the dark icing on the other.  Note:  you can make the dark icing blacker by substituting black vodka, like Blavod for the water--just don't serve them to kids!  Oh Dear!!
