Theme Recipe: Break Fast Apple Pancake


This is a recipe that pertains to our Fright Month Jewish theme yesterday, which was Yom Kippur on the calendar.  Some people fast the entire 25 hours of the Holiest day on the Jewish calendar; but the more usual custom is the have a Yom Kippur Break Fast (which is where the word "breakfast" comes from in the first place).  All types of morning foods are served at this occassion, including, Blintz Soueffle's, Eggs of different types, fresh whole wheat bread with spreads, Noodle Kugel, etc.; all with lots of juice, tea and fresh coffee to wash it down with.  Another dish that you might find on the table for this occassion is apple pancake.  This particular recipe comes from a charity cookbook put out by the Ahavath Achim Hebrew Congregation in Wichita, Kansas entitled Traditionally Your...a Collection of Jewish Recipes.

APPLE PANCAKE

6 eggs
1 1/2 cup milk
1 cup flour
3 tbsp. sugar
1 tsp. vanilla 
1/4 tsp. cinnamon
1/4 lb. butter
3 apples
4 (or more) tbsp. brown sugar

1.  Preheat oven to 425.  Mix the first 7 ingedients together in a large mixing bowl with a wire whisk (my note:  this can be done with a hand mixer, or in a free standing mixer).  .  Set aside.

2.  Melt the butter in a small saucepan.  

3. Peel and slice the apples.  Spread these into a 9 by 13 baking pan or a 12 inch quiche pan.  Pour the butter over the apples, place in oven, when the apples start to seriously sizzle, remove them and pour over the prepared batter.  Return to oven and bake for 10 minutes.  Remove and sprinkle with the brown sugar, return to the oven and bake another 10 minutes.
