From a favorite southwestern food writer of mine Jane Butel and her Southwest Entertaining. Of course, it's a pumpkin soup.
Halloween Soup Pumpkin Style
5 cups vegetable stock
1 small onion, chopped
1 clove garlic, minced (or crushed)
2 leaves fresh sage or 1/3 tsp. dried sage
3 cups fresh pumpkin, chunked
1 1/2 cups evaporated skim milk
1 tsp. crushed Caribe chile (or chile flakes or pure groung chile)
1. Place the first 5 ingedients into a stock pot and bring to a boil. Reduce heat and simmer for 40 minutes. Remove from heat. When cooler, puree in a food processor or blender.
2. Add the evaporated milk to a clean pot. Add the pumpkin puree and heat for 10 minutes over medium heat. To serve, sprinkle with the chile for garnish.
