Tomatoes dare eat us???! Well, turn about is more than fair play! Here's a basic ripe tomato salad that is a great spring board for all kinds of variations and is easily multiplied.
2 Ripe tomatoes
Fresh Basil
Sea Salt
Fresh ground black pepper
Slice tomatoes, chop basil (or leave whole). Plate tomatoes and sprinkle with chopped basil, season with salt generously grind on the black pepper. Or plate the whole basil and proceed from there. It's not a bad addition at all to add slice mozzarella, or crumbled feta or blue cheese, shaved Parmesan or Romano. Add chopped olives or pickled capers, or even toast points.
