WHIPPED POTATOES
Well buttered of course!
These are topped with paprika, see below for spooky food presentation ideas.
8 medium sized baking potatoes, peeled and cubed
1 3 oz. package of cream cheese
1/4 cup butter, melted
Salt and pepper (white is good, but black will do) to taste
Milk (or....Cream) as needed
Paprika to top (regular is fine, but the smoked kind from Spain...even better!)
1. Cook potatoes in a generous amount of boiled salted water until tender. For large cubes, cook for around minutes. Drain well
2. Combine the cream cheese, butter, seasoning and milk or cream to a large mixing bowl, or into a mixing bowl for a standing electric mixer. Add the hot drained potato chunks and whip, increasing the speed as the the potatoes break down.
3. Place in a serving dish and top with the paprika. If they are to be well buttered, then another 1/4 cup of melted butter!
You can make these with different colored potatoes |
