Recipe



NORWEGIAN POTATO PANCAKES

1 cup flour + extra for kneading
1 quart mashed potatoes (homemade)
Salt to taste
Butter, room temperature
Brown Sugar

Mix the flour in with the mashed potatoes to make a soft dough.  Knead the dough on a floured board lightly.  Take out a meatball sized piece and roll is out very thin, using extra flour to make sure that they don't stick.  Bake on an ungreased griddle until light brown on both sides.  Spread the pancakes with butter and sugar as they cook.
