Theme Recipe: Cinnamon Pie

This has been done of the web before....turns out after looking up "Psych cinnamon pie" it seems that a lot fanatics of the show posted something on it.  So what is it?  Is a real pie, etc?  Or just something that someone made up??  It's a real pie, a kind of custard based affair.  With a fair amount of variations. If you are a foody like me, and enjoy zaniness than this show has more than enough of both!!  This particular obsession of Shawn and Gus comes from the special extended episode produced for season 5:  Dual Spires, which is a hilarious spoof on "Twin Peaks,"  that unites some of the original cast.  It is well known that Shawn and Gus have a thing about Cinnamon Festivals; that has been a part of the show from the very beginning...and a running joke of churros (an inside poke at James Roday Tejano background??); so when they find out that there is a cinnamon festival that they've never heard, in some town that so small "it's in parentheses" after receiving a mysterious email about the whole thing; well, naturally, they have to investigate.  What they find is a completely creepy little town that has two things going for it:  it seems to  imitate every small town television show ever made, and Cinnamon Pie!

1/2 cup sugar
1/2 cup brown sugar
pinch salt
2 tbsp. flour
1 tsp. cinnamon
3 tbsp. melted butter
1 tsp. vanilla
1 egg, beaten (room temp.)
1 cup milk (room temp.)
1/2 cup cream (room temp.)

1 pie crust for bottom
Extra brown sugar mixed with cinnamon
350º oven

1.  Mix all the dry ingredients together.

2.  In a separate bowl, combine the egg, milk, cream and vanilla.

2.  Pour in the melted butter and mix well.  Pour in the egg mixture and stir well to combine.  Pour this into pie shell and bake for 40 minutes.  Remove from oven.  Turn the heat up to 400º.  Top the pie with the brown sugar and cinnamon mixture and put back into oven, cook for a remaining 20 minutes, making sure the sugar doesn't burn and pie is cooked through--if needed turn off the heat to finish cooking.  Let cool, top with whipped cream (Gus and Shawn do!!), if liked and serve with lots of hot coffee!!

  1. Can I just say that I made this pie tonight and its now probably going to be one of my new faves. At first I was worried because it didn't appear all the way done...a bit jiggly. I actually covered my crust with some foil and baked just a bit longer to make sure... but like a cheesecake or other type of custard pie it will firm up as it cools down so no worries.

Will be making this one again for sure!
